For many years, the Stockyards restaurant was little more than a 35 seat coffee counter serving the cattlemen who conducted their business here. But coffee was not enough to meet the needs of those who spent their entire day in and around the Livestock Exchange, which overlooked what was there, the world's largest feedlot operation; some 200 acres of pens accommodating 35 to 40 thousand head of cattle at a time. The first attempt at food service was little more than a few tables set up in the lobby, strictly for the dining convenience of the men and women whose business was beef. When the original building was gutted by fire in 1954, it was decided that the new building - completed within a year - would include a restaurant and bar. The Stockyards restaurant soon became known statewide for its fine food - excellent prime hand cut and aged beef (how else to satisfy a cattle baron's appetite?), fresh pork, poultry and seafood ¿ cooked to perfection and served in the authentic style of the 1890's. The decorations, including the hand painted murals, crystal chandelier, stained glass and solid mahogany '1889 Bar' reflected the loving attention to style and quality for which the Stockyards eventually became world famous. The cattle pens have been gone for years, and the restaurant has been recently remodeled to showcase its original charm, but little else has changed. Here, you will find consistently excellent dining and genuine, friendly atmosphere. Open Mon-Wed 11-12midnight; Thurs 11-11:30pm; Fri 11-12midnight; Sat 5pm-12midnight; Sun 4:30pm-9pm.
